Almond & apricot smoothie bowl

Frankly speaking, I never really understood people who prepare smoothie bowls for breakfast. I mean they're pretty, but who has the time? I am probably just jealous of those yoga foodies who have no kids and all the time in the world, but still: smoothie yes as it is the best breakfast ever, but it'll all mix up anyway in the stomach so no decorations please.

...but I had to try it so that I know what I'm talking about, right?


Ingredients

(for 2 bowls)

100 g almonds

100 g dried apricots

1 dl water

1 dl coconut milk

1 tablespoon peanut butter

For decoration: raw chocolate nibs, puffed rice & amaranth, dried strawberries, etc.

Preparation

Soak the almonds and apricots in water overnight.

Add coconut milk and peanut butter and blend to a smoothie. Serve in a bowl alone or over natural yoghurt, decorated with chocolate nibs, fresh or dried berries, puffed rice or amaranth - whatever you fancy!
