Christmas nuts

These Nigella-inspired caramelized nuts are a real Christmasy thing to prepare and enjoy. I use them also to decorate and fill pralines or breakfast croissants. Warning: they are highly addictive and one is never enough.


50 g butter
1 dl maple syrup
1,5 teaspoons salt
0,5 teaspoon cayenne pepper
7 dl pecan halves, almonds, walnuts - you pick


Melt the butter with the maple syrup, salt and cayenne pepper in a pan over a gentle heat. Add the nuts and stir to mix, leave them on the heat for 2-3 minutes. Spread the nuts on parchment paper to cool, then place in a pretty bowl to serve.
