Cookies

I have earned a bit of a reputation with these cookies at work and in the neighborhood, and they are my favorite baking thing. Here I start with my two most wanted recipes, but will post more variations later.


OAT & RAISIN

Ingredients

1 teaspoon salt
1 teaspoon baking soda
220 g butter
150 g / 1,8 dl sugar
130 g / 1,8 dl brown sugar
2 large eggs
3 drops of vanilla extract
270 g / 4,5 dl baking flour
1 dl raisins
1,5 dl dark chocolate cut to small chunks
40 g / 1 dl rolled oats


Preparation

Mix flour, baking soda and salt in a separate bowl.
Beat butter, sugars and vanilla extract in a bowl until smooth. Add eggs and beat well.
Add flour mixture gradually to the dough, mixing well.
Add raisins, oats and chocolate chunks.
Take a tablespoon of dough per cookie and place onto  baking sheets.
Bake in 190C for 9-11 minutes until golden brown.

COOKIE TIPS

  1. Mix the ingredients well. The dough should be even.
  2. Use good chocolate: if you would not eat it as it is, do not use it for cookies
  3. Careful when baking! Cookies should be a bit raw inside and one minute too long can already ruin then, so be alert.
  4. The dough spreads in the oven, so leave some space between the cookies: large Cookies 9 (3 x 3) per tray, small ones 16 (4 x 4)
  5. No dough drops between cookies, you do not want burnt pieces attached to the cookies.

PECAN & MILK CHOCOLATE

Ingredients

1 teaspoon salt
1 teaspoon baking soda
220 g butter
150 g / 1,8 dl sugar
130 g / 1,8 dl brown sugar
3 drops of vanilla extract
320 g / 5,4 dl baking flour
2 large eggs
1 dl pecans cut to small pieces
1,5 dl milk  chocolate cut to small chunks


Preparation

Mix flour, baking soda and salt in a separate bowl.
Beat butter, sugars and vanilla extract in a bowl until smooth. Add eggs and beat well.
Add flour mixture gradually to the dough, mixing well.
Add pecans and chocolate chunks.
Take a tablespoon of dough per cookie and place onto  baking sheets.
Bake for 9-11 minutes until golden brown.
