Cucumber, cherry tomatos & oregano salad

Fresh oregano gives this otherwise simple salad nice character.


(for 4 servings)

1 cucumber

200 g cherry tomatos

Handful of oregano leaves

Olive oil

Pinch of salt

Black pepper to taste


Peel the cucumber, cut in half and remove seeds from the middle with a tea spoon. Slice thinly and though into a bowl.

Cut the cherry tomatos in half and add over cucumber slices.

Tear the oregano leaves to release their aroma and add to salad.

Pour olive oil over salad, add salt and pepper. Serve immediately.
