Making fudge is fast and easy. Really. Easy. The original Fantasy fudge is great but a little heavy & sweet for my taste, so I developed this semi-healthy version with medjool dates instead of sugar and lots of nuts. Works totally!
1/2 dl cream
50 g butter
100 g medjool dates
100 g dark chocolate
75 g marshmallows
75 g crushed walnuts
Place cream, butter, and pitted and chopped dates in a pan and bring to a gentle boil. Mix and cook for 2-3 minutes. Blend to a smooth paste.
Add chocolate and marshmallows and stir until both have melted (heat up again if needed to melt the chocolate). Add chopped walnuts and pour into a square dish covered with baking paper. Decorate with nuts if desired.
Place in the fridge for 1-2 hours, cut into pieces and enjoy.
