All recommendations say we should eat fish twice a week. Here an esy one for one of those days: very quick to make and quite tasty. And almost too healthy to be good... but only almost.
(for 4 servings)
600 g white fish
100 g finely chopped tomatos
1 garlic clove
0,5 dl olive oil
4 handfuls of kale leaves
Rip the fish to pieces and place in a bowl. Add chopped tomatos, finely chopped garlic and basil, olive oil, salt and pepper.
Using your hands, form the fish dough to flat patties and fry them quickly. Serve on kale chips.
Kale chips: fry kale leaves in olive oil until crispy, salt them lightly.
