Halloumi baguette

Sometimes a really good baguette can make a perfect lunch. Wrap this halloumi baguette in brown baking paper and eat it without fork & knife - or take it outside for a lunch in the park.


Ingredients

(for 2-3 servings)

 One baguette

200 g halloumi cheese

Marinated red onion

Rucola

100 g Greek yoghurt

1 teaspoon honey

Black pepper

Salt to taste

Preparation

Prepare the sauce: mix yoghurt, honey, pepper and salt, place in fridge

Cut the baguette in half

Fry sliced halloumi in olive oil until golden

Fill the baguette: first lay a rucola bed, then pile yoghurt sauce, fried halloumi and the marinated onion.
