My best granola
Strawberries and cocoa are an old match made in heaven. Serve them over a soft chia coconut pudding and quark, and you get a pretty bowl loaded with nutritious ingredients - perfect afternoon snack or breakfast.
Coconut chia pudding
Ingredients
2 dl fresh cocoa milk
3 tablespoons chia seeds
250 g (vanilla) quark
3 dl fresh strawberries, cut in small chunks
4 tablespoons raw cocoa nibs
Preparation
Mix coconut milk and chia seeds and place in the fridge for at least 1 hour (or overnight if you serve this for breakfast)
Build the bowl: first chia pudding and quark in layers, then strawberries on top. Spinkle with raw cocoa nibs.

Preparation
Place eggs in cold water and turn the heat on.
Let the water boil for one minute only, then turn the heat off and leave for 10 minutes.
After 10 minutes, give the eggs a good cold shower under the tap.

I learned this trick from a cooking school mate who had learned it from a chef in Japan. This is a bullet-proof way to get perfect hard-boiled breakfast eggs, soft and pretty.

Preparation
Chop cashews and almonds, mix with other ingredient.
Spread mixture thinly on a baking tray and place in 100 C oven for 20 minutes.

1 dl unpeeled almonds
2 dl rolled oats
2,5 tablespoons cocoa nibs
1 dl dried mulberries
2 tablespoons agave syrup
2 tablespoons virgin coconut oil
