Nectarine, basil & pistachio salad

Sweet nectarine and salty pistachios bring out the best in basil. This salad is a nice summetime starter or a part of a meze table.


(for 4 servings) 

4 ripe nectarines
1 dl pistachios
Handful of basil leaves
2 tablespoons virgin olive oil
1 tablespoon balsamico vinegar
Black pepper


Cut the nectarine to slices, peel the pistachios, rip the basil leaves to release their aroma.

Mix all ingredients in a bowl, pour oil and balsamico vinegar on top.
