Sweet nectarine and salty pistachios bring out the best in basil. This salad is a nice summetime starter or a part of a meze table.
(for 4 servings)
4 ripe nectarines1 dl pistachiosHandful of basil leaves2 tablespoons virgin olive oil1 tablespoon balsamico vinegarBlack pepper
Cut the nectarine to slices, peel the pistachios, rip the basil leaves to release their aroma.
Mix all ingredients in a bowl, pour oil and balsamico vinegar on top.
