There are foods which look good, taste good and make you feel really good. Ratatouille is one of them. It is easy, quick to prepare. and it goes with so many other foods: basically any meat, fish or fried halloumi. You can also serve it with feta cheese and fresh bread which makes it a full meal.
One zucchini One red pepper One shallot onion 250 g cherry tomatos, cut in half One garlic clove 0,5 teaspoon dried rosemary 2 tablespoons olive oil Black pepper Fresh herbs
Cut all vegetables to chuncks.
Lightly fry shallot, garlic, rosemary and black pepper in olive oil with medium heat.
Add zucchinis and red pepper, fry for 2 minutes.
Add halved cherry tomatos, cover the pan and let simmer for 15 minutes.
