Raw nut & date energy bar

If you happen to live in Switzerland like me,  and if your kids go to kindergarten like mine, then you too need to pack them a healthy snack for their 9 o'clock break.

To avoid too much thinking of what to pack early in the morning in a hurry (not my strongest moment of the day), I developed these snack bars, which also happen to be raw. Energy and nutrition in an easily transportable form which - most importantly - kids (and me!) really like to eat.

Ingredients

(for 10-15 bars)

1 dl almonds
1 dl pecan nuts
1 dl Brazil nuts
3 dl dates
2 tablespoons virgin coconut oil
1 drop of vanilla extract

Preparation

Add all nuts into a food processor (or use a Bamix like I do - this is no ad) and grind them until they are crumble-sized. Add coconut oil, vanilla, and dates one by one until the ingredients are mixed and clump together.

Line a square pan with parchment paper and firmly press the dough into the pan until it is thick and square-shaped. Cover well, chill for at least an hour, and cut in bars with a sharp knife.

Store in the frigde.
