I never eat French fries - unless they are made of sweet potatos.
These wedges are an upgraded version of the usual ones, with nutmeg & maple syrup which give them a sweet touch and a Christmasy smell that will fill your kitchen.

1 kg sweet potatoes
1 tablespoon virgin coconut oil
1 tablespoon maple syrup
1 teaspoon salt
1/2 teaspoon ground black pepper
1/4 teaspoon grated nutmeg
Peel the sweet the potatoes and cut them to wedges.
Melt the coconut oil and add the spices and maple syrup. Mix well and spread over sweet potatos until they are well covered.
Spread the potatoes on a large baking tray. Roast in 175C until soft and caramelized, ca. 1 hour.
