Spinach, cucumber & mint salad

This green salad is full of taste and vitamins. It goes especially well with a hot farinata.

You can also turn it into a light main course by adding fried chicken breast and parmesan flakes.


(for 4 servings) 

80 g fresh spinach

1 cucumber

Handful of fresh mint leaves

Juice of half a lime

2 tablespoons olive oil

1 teaspoon white vinegar

Pinch of salt

Black pepper

0,5 teaspoon honey


Wash and dry the spinach, put in a bowl.

Peel and cut the cucumber, chop the mint leaves and through in the bowl on top of spinach.

Mix lime juice, honey, vinegar, oil, salt and pepper and pour over the salad.

Serve immediately.
