Stir fry with greens

Stir fry is my do-not-know-what-to-cook-today-and-have-no-time-to-think dish: I through in it whatever veggies I happen to find in the fridge - they taste anyway superb thanks to the marinade.


 

Ingredients

(for 2 servings)

1 teaspoon ginger paste
2 tablespoons soy sauce
2 tablespoons sesame oil
2 garlic cloves
1 tablespoon sesame seeds
250 g chicken / tofu
200 g green beans
100 g soybeans (edamame)
50 g roasted cashews
fresh chopped coriander
fresh chili

Preparation

Prepare the marinade: mix ginger paste, soy sauce, sesame oil, sliced garlic and sesame seeds, pour over meat/tofu

Fry the marinated meat/tofu, once cooked add the greens and fry them quickly (do not cook, they should stay crisp).

Sprinkle with roasted cashews, coriander and chili and serve immediately.
