Strawberry & walnut rocky road


The classic rocky road is too sweet and too heavy for my taste. With some pimpin' it can be turned into a perfect dessert: pretty, sweet, bitter and tart at the same time. As it is prepared beforehand, it is ready to be served without stress!

This version is almost healthy thanks to dark chocolate (70%), walnuts, strawberries, and using puffed rice instead of bisquits. Marshmallows cannot be replaced - some things are sacred.



Cooking time: ACTIVE 15 min, PASSIVE 120 min

Ingredients

(makes 20 bars) 

200 g dark chocolate

50 g butter

1 dl puffed rice

20 g dried strawberries

1 dl chopped walnuts

50 g mini marshmallows

Preparation

Line a small baking tray with baking paper.

In a large pan melt the butter and chocolate slowly, stiring it constantly until there are no lumps of chocolate. Remove from the heat.

Take half of the dried strawberries, chopped walnuts, puffed rice, and marshmallows and pour into the pan of the chocolate mixture. Stir the mixture until everything is completely covered with chocolate.

Pour the mixture into the baking tray and spread the mixture evenly. Decorate with the rest of the dried strawberries.

Refrigerate for at least 2 hours and cut into long bars.
