Sweet potato "lepuska"

Leftover cooking is not only ecologically and financially smart, it can also produce food which tastes better than the original. "Lepuska" is a traditional Finnish bread made of leftover mashed potatos. It is eaten fresh from the oven with butter - incredibly good... This version is made with leftover mashed sweet potatos. I know this is a bold statement, but I dare say they're even tastier!


Ingredients

(10 small / 6 large lepuskas)

3 dl wheat flour
3 dl mashed sweet potato
1/2 teaspoon fleur de sel
1 egg

Preparation

Preheat the oven to 200C.

Mix the egg, salt, and flour with cold mashed sweet potato.

Using a tablespoon, place small piles of dough on a baking tray covered with baking paper. Flatten the piles and bake for 20 minutes.

Eat hot with butter.
